BOURBON. VANILLA. RED FRUIT.
This Costa Rican Coffee is from producer Tono Barantez. His farm Herbazu is located in the West Valley Region along the volcanic mountain range. This particular lot was red honey processed. What the heck is honey processing? Great question! It’s somewhere between natural and washed processing. WIth honey processing the friut is removed from the coffee bean or seed but it is not washed, the musilage is left around the sed during the drying process.
There are a variety of honey processing methods (see this article for more info!) but red honey means that more shade is introduced to slow down the drying time.
The result is a rich tasty coffee with a bourbon like flavor. Enjoy!
